Pasta is a great way to create a quick and easy dish for meal times. You can add in a host of ingredients of your own preference and also whip up some simple sauces for extra flavour.

We have chosen this recipe as it tastes good as it is, or your can choose to add in other ingredients for a bigger variety. This portion is enough for 1 person and will take less than 30 minutes to prepare, so let's get started......


* 2 tablespoons of olive oil
* 1/2 a red onion (finely chopped)
* A pinch of dried chilli flakes
* 100g of halloumi (cut into chunks)
* 150g of penne pasta
* 2 tablespoons of chopped fresh parsley
* 2 tablespoons of chopped fresh basil
* 1 Lemon (only the juice needed)
* Salt and black pepper to season

Preparation Method

1. To start, boil water in the kettle and add to a pan, add the penne pasta and cooking according to the packet.
2. Meanwhile, heat the olive oil in a frying pan over a medium heat, add the onion and chilli flakes, fry for 2-3 minutes until soft.
3. Now add in the halloumi and fry for a further 2-3 minutes, until golden.
4. When the pasta is cooked, drain it of well and add into the pan with the halloumi and onions.
5. Now add the fresh herbs and the lemon juice and give everything a good mix together.
6. Serve in warm bowl and season with the salt and pepper. Enjoy!
