What Were Eating Cottage Pie

The humble Cottage Pie is a firm favourite of ours, it's so simple and has everything you need for a warm comforting meal. This recipe serves 4 people and is a real family dish, so let's get started......
Ingredients
* 1 tablespoon of oil* 1 large onion (chopped)
* 2 medium carrots ( chopped)
* 560g minced beef
* 400g of canned tomatoes
* 290ml of beef stock
* 1 bay leaf
* Fresh thyme leaves from 1 sprig
* 2 tablespoons of tomato puree
* Salt and ground black pepper
For the topping:
* 750g potatoes (peeled and chopped)
* 225g parsnips (peeled and chopped)
* 2 tablespoons of creamed horseradish
* 75g of butter
* 55ml of milk
Preparation Method
1. Preheat the oven to 190C/375F/Gas 5>2. Heat the oil in a large pan, then add the chopped onions and carrots and cook over a medium heat for 5 minutes until soft.
3. Now add the minced beef and cook for 3 minutes to brown.
4. Add the tomatoes, tomato puree, beef stock, thyme and bay leaf. Cover and leave to simmer for 30 minutes, remembering to season.
5. Now for the topping, boil the potatoes and parsnips in water until soft. Drain and mash in the milk and butter.
6. Stir in the horseradish and season with salt and pepper.
7. When the meat has finished 30 minutes simmering, spoon it into an ovenproof dish. Top with the mash and level it out over the dish.
8. Bake for 30 minutes in the oven until the mash is golden brown. Be Aware of Hot Dishes.
9. You can always add some green beans to complement the dish. Enjoy!
