* 125ml malt vinegar
* 2 eating apples (cored and chopped)
* 3 tomatoes, roughly chopped
* 1 onion (finely chopped)

* 8 slices of dry-cured back bacon
* 350g mature cheddar cheese (grated)
* 50ml beer
* 1 tablespoon English Mustard
* 3-4 dashes Tabasco Sauce
* 1 tablespoon Worcestershire Sauce
* 2 tablespoons plain flour

4. Place the bacon onto an oven tray and grill for 4-6 minutes, or so it's cooked to your liking.
5. Place the cheese and beer into a frying pan and heat until the cheese is melted, bubbling and smooth. Now stir in the mustard, worcestershire and tabasco sauce.Stir in the flour and cook until just thickened. season with salt and pepper.
6. Meanwhile, toast the bread and then place into an ovenproof dish. Top each slice with 2 pieces of bacon and the rarebit mixture.
7. Grill for 2-3 minutes, or until the topping is golden brown and bubbling. 8.
